Vigneron Alexandre Gavignet is a fourth generation wine maker. His ancestor Honoré Gavignet was born in 1879 and worked at the Domaine de la Romanée-Conti until 1920 before settling in Nuits-St-Georges. The domaine now consists of 3ha of vines, the youngest of which are 40 years old. They farm according to Lutte-Raisonnée, and no chemical treatments have been used for 7 years as they move towards fully organic viticulture. Their small size means they focus on quality, all picking is by hand into small cases, and there are strict selections in the vineyard and at the vibrating sorting table ensuring only the healthiest fruit is used. The grapes are then de-stemmed and given a three week cold soak to initiate a gentle extraction, before fermentation. After fermentation a vertical press is used, and gravity moves the wines to barrel. This could be Foudres, for the Hautes-Cotes, old oak for the
Bourgogne, and between 30% for the village wines and 100% new oak for the Grand Cru. Elevage lasts around 18 months.
These wines are relatively traditional, with a clear sense of Nuits-St-George structure in their deep fruit.
