Grown on ancient marine clay and marl the soils are more akin to those of Sancerre and Pouilly Fumé. The Chardonnay from Chablis consequently produces very different textures and flavours to that grown on the limestone further south in the Côte D’Or. Bernard Billaud raises his Chablis with the delicate touch of a true artist and even his Petit Chablis awakens the haunting aromatics and flavour of the ancient seabed. As one moves through the gears of Village, Premier and Grand Cru quality the grape adds its hallmark grandeur to the chalky minerality of the soil. No oak is used, thus protecting Chablis’s unique character and its green/gold luminescence in the glass.
